i made these for the kids classes on St. Patrick's Day. (You know... rainbow, pot of gold ,etc.:) super duper easy and fun to make, and the kids thought they were cool, which is a plus.
- Mix the white cake batter according to package directions.
- Evenly divide prepared batter into several different bowls. The amount of bowls will depend on the amount of colors you want for your cupcakes.
- Add a generous amount of gel food coloring to each bowl until you have a vibrant batter.
- I mixed 5 bowls - red, orange, blue, purple, green
- Line your muffin tin with paper cups and then begin spooning the colored batter into the cups.
- Add batter color by color trying to make an even layer on the bottom... (I got lazy on that part, but they still turned out.)
- Fill the cups approximately 2/3 full of batter.
- Bake as directed on the box.
- Allow the cupcakes to cool completely, and frost to your liking.
- I made a cream cheese frosting (because it's my fav) and decorated with rainbow sprinkles.
Enjoy!

You such a super mom. I loathe you. Just joshing! As always, your posts are terrific, AND (?) I might just be making some of these uber-cool cupcakes this weekend. Hope all is well. Jolyne Purvis said hello, I saw her today.
