rainbow cupcakes.



i made these for the kids classes on St. Patrick's Day. (You know... rainbow, pot of gold ,etc.:) super duper easy and fun to make, and the kids thought they were cool, which is a plus.

  1. Mix the white cake batter according to package directions.
  2. Evenly divide prepared batter into several different bowls. The amount of bowls will depend on the amount of colors you want for your cupcakes.
  3. Add a generous amount of gel food coloring to each bowl until you have a vibrant batter.
  4. I mixed 5 bowls - red, orange, blue, purple, green
  5. Line your muffin tin with paper cups and then begin spooning the colored batter into the cups.
  6. Add batter color by color trying to make an even layer on the bottom... (I got lazy on that part, but they still turned out.)
  7. Fill the cups approximately 2/3 full of batter.
  8. Bake as directed on the box.
  9. Allow the cupcakes to cool completely, and frost to your liking.
  10. I made a cream cheese frosting (because it's my fav) and decorated with rainbow sprinkles.
*** the plan was to pipe on puffy clouds, but i ran out of time and frosting. you could also use marshmallows as clouds, or put a gold coin on top etc. etc... you catch the idea.

Something that you have posted that i can relate too. i make those all the time. Cakes are the prettiest. Don't look at your poo though!
